Carleton Farms Pork Chop, Apple Outlaw Cider Brine, Troon Vineyard Summer Vegetable Succotash, Maple Mustard Vinaigrette

First off, it is a culinary dream to be out in the Applegate Valley. There is an abundance of ranches and farms bursting with fresh, local ingredients. This week we are able to take advantage of a summer vegetable assortment from Troon and use the cider from Apple Outlaw for our brine.


The second thing to point out about the special is how the chops were cut. We can guarantee that once you've had these chops from the loin, you'll never want to go back to the chops you get at the store. This is one of the benefits we get from buying an animal ourselves.


The special this weekend is a quintessential summer dish. A hearty pork chop, fresh assortment of vegetables and a slightly sweet vinaigrette salad. It's packed with flavor and has the perfect balance.


A bonus for this weekend is a Nicoise Salad. It includes Albacore Tuna Confit, Poached Potatoes, Olives, Pole Beans, Heirloom Tomatoes and a Herb Vinaigrette.


Come in and they them both! We'll be running this from August 18th - August 20th 2023 or until they run out.
